Zucchini Bread

Ingredients:

1 large zucchini (about 2 cups shredded)
4 eggs
2 cups sugar
1 cup vegetable oil
1 teaspoon vanilla
3 cups flour
1 tablespoon cinnamon
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup raisins


Directions:

1. Preheat oven to 350°.  
2. Peel and shred zucchini in bowl.
3. Combine eggs, sugar, oil and vanilla and add to zucchini.  Mix well.  
4. Combine remaining ingredients and add flour and dry ingredients.
5. Stir in raisins.  
6. Place into 2 greased loaf pans.  
7. Bake for 60 minutes.
