Pork Roast with Raisins

Ingredients:

4 lb pork boneless loin roast

½ tsp salt

½ tsp ground cinnamon

¼ tsp garlic powder

¼ tsp pepper

¼ tsp ground cumin

 

Raisin Sauce:

1 ½ cups apple juice

1 ½ cups raisins

¼ cup reduced-calorie maple syrup

½ tsp ground cinnamon

1 tsp cornstarch

2 tbsp cold water


  

Directions:

  1. Preheat oven to 325°F.
  2. Trim the roast. Mix cinnamon, salt, garlic powder, pepper and cumin and spread evenly over the roast.
  3. Place pork on rack of 13” x9” roasting pan and cook for 2 hours, uncovered.
  4. While roast is cooking, heat apple juice, raisins, syrup and cinnamon and bring to boil. Simmer uncovered for 10 minutes or until raisins are plump and juicy. Set aside.
  5. Mix cornstarch and cold water together and add to raisin mix.
  6. Boil and stir for 1 minute.
  7. Slice and serve pork with raisin sauce.
