Ingredients:
1 5lb chicken
Salt
Pepper
½ tsp paprika
¼ cup honey
2 tbsp lemon juice
2 tbsp butter
2 tsp mint jelly
1 tsp lemon peel (grated)
Directions:
- Preheat oven to 350 degrees F.
- Put the chicken in 13 x 9” roasting pan and sprinkle with salt, pepper, and paprika.
- Roast chicken for 1 hour.
- Heat the honey, lemon juice, butter, mint jelly and lemon peel together until the butter and jelly are melted.
- Brush the chicken with glaze and roast for another 30 minutes or until done.
