Ingredients:

1 5lb chicken

Salt

Pepper

½ tsp paprika

¼ cup honey

2 tbsp lemon juice

2 tbsp butter

2 tsp mint jelly

1 tsp lemon peel (grated)

 

 

Directions:

  1. Preheat oven to 350 degrees F.
  2. Put the chicken in 13 x 9” roasting pan and sprinkle with salt, pepper, and paprika.
  3. Roast chicken for 1 hour.
  4. Heat the honey, lemon juice, butter, mint jelly and lemon peel together until the butter and jelly are melted.
  5. Brush the chicken with glaze and roast for another 30 minutes or until done.
