Ingredients:

1 3-4lb chicken (quartered)

¼ cup flour

½ tsp salt

⅛ tsp pepper

¼ tsp thyme

¼ tsp oregano

¼ tsp rosemary

2 tsp parsley (minced)

3 garlic cloves

1 large onion (chopped)

½ cup chicken broth

 

 

Directions:

  1. Preheat oven to 375°.
  2. Sauté the garlic and onion.
  3. Coat chicken pieces with the flour, salt and pepper in a bag.
  4. Brown chicken on both sides and put chicken and onion slices in 13 x9” roasting pan.
  5. Mix rosemary, parsley, and chicken broth together.  Baste the chicken with mixture occasionally while cooking.
  6. Roast for 50 minutes or until temperature of the chicken reaches160 degrees F.
