Ingredients:
1 3-4lb chicken (quartered)
¼ cup flour
½ tsp salt
⅛ tsp pepper
¼ tsp thyme
¼ tsp oregano
¼ tsp rosemary
2 tsp parsley (minced)
3 garlic cloves
1 large onion (chopped)
½ cup chicken broth
Directions:
- Preheat oven to 375°.
- Sauté the garlic and onion.
- Coat chicken pieces with the flour, salt and pepper in a bag.
- Brown chicken on both sides and put chicken and onion slices in 13 x9” roasting pan.
- Mix rosemary, parsley, and chicken broth together. Baste the chicken with mixture occasionally while cooking.
- Roast for 50 minutes or until temperature of the chicken reaches160 degrees F.
