Ingredients:
4 teaspoons olive oil
4 (6oz.) pieces boneless thickly cut salmon
Salt and pepper to taste
2 tablespoons honey mustard
2 teaspoons fresh thyme, chopped
2/3 cup panko bread crumbs
2 tablespoons parsley, chopped
½ teaspoon sweet paprika
Directions:
- Line baking sheet with foil and place salmon skinned side down. Top with salt and pepper.
- Mix together mustard and 1 teaspoon of thyme. In separate bowl, combine bread crumbs, remaining thyme, olive oil, parsley, paprika, salt and pepper.
- Top salmon with mustard mixture and then sprinkle with bread crumb mixture.
- Bake in a 400° oven, for 12 to 14 minutes, until salmon is almost firm to the touch and begins to flake when poked with fork.
