Baked Salmon

Ingredients:

4 teaspoons olive oil

4 (6oz.) pieces boneless thickly cut salmon

Salt and pepper to taste

2 tablespoons honey mustard

2 teaspoons fresh thyme, chopped

2/3 cup panko bread crumbs

2 tablespoons parsley, chopped

½ teaspoon sweet paprika

 

 

Directions:

  1. Line baking sheet with foil and place salmon skinned side down.  Top with salt and pepper.
  2. Mix together mustard and 1 teaspoon of thyme.  In separate bowl, combine bread crumbs, remaining thyme, olive oil, parsley, paprika, salt and pepper.
  3. Top salmon with mustard mixture and then sprinkle with bread crumb mixture.
  4. Bake in a 400° oven, for 12 to 14 minutes, until salmon is almost firm to the touch and begins to flake when poked with fork.
