Baked Scallops

Ingredients:

2lbs scallops

1 cup dry white wine

Pinch of salt

6 tablespoons unsalted butter, divided

1 medium onion, finely chopped

2 ½ tablespoons flour

½ cup fine bread crumbs

 

 

Directions:

  1. Set oven to 400 degrees.
  2. In a medium saucepan, bring to a boil the scallops, wine and salt.  Let simmer, covered, for 4 minutes.
  3. Remove scallops and place in baking pan. Set aside liquid from pan.
  4. Heat 3 tablespoons of butter in pan over medium heat.  Add in onions and cook until willed, 2 to 3 minutes.
  5. Sprinkle the flour in slowly to the onion mixture and whisk in reserved cooking liquid. Once sauce has thickened, pour over scallops in pan.
  6. Top scallops with breadcrumbs and dot with remaining butter.
  7. Bake for about 15 minutes, until brown and bubbly.
