Ingredients:
2lbs scallops
1 cup dry white wine
Pinch of salt
6 tablespoons unsalted butter, divided
1 medium onion, finely chopped
2 ½ tablespoons flour
½ cup fine bread crumbs
Directions:
- Set oven to 400 degrees.
- In a medium saucepan, bring to a boil the scallops, wine and salt. Let simmer, covered, for 4 minutes.
- Remove scallops and place in baking pan. Set aside liquid from pan.
- Heat 3 tablespoons of butter in pan over medium heat. Add in onions and cook until willed, 2 to 3 minutes.
- Sprinkle the flour in slowly to the onion mixture and whisk in reserved cooking liquid. Once sauce has thickened, pour over scallops in pan.
- Top scallops with breadcrumbs and dot with remaining butter.
- Bake for about 15 minutes, until brown and bubbly.
