Ingredients:

8 lasagna noodles

1 cup reduced fat Monterey Jack cheese (shredded)

1 carton part-skim ricotta cheese (15 oz)

1 can green chilies (4.5 oz and chopped, drained)

½ tsp chili powder

⅛ tsp salt

2 cups canned black beans (drained and no salt added)

1 jar salsa (no salt added)

Cilantro sprigs (optional)

 

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Cook lasagna noodles in boiling water and set aside.
  3. Mix together the cheeses and the next 3 ingredients. Spread over one side of a lasagna noodle and pour some black beans over the mix and roll noodle up.
  4. Place rolls with the seams down in baking pan.
  5. Bake for 25 minutes.
  6. Spoon the salsa over the rolls and sprinkle with cilantro.
