Ingredients:
8 lasagna noodles
1 cup reduced fat Monterey Jack cheese (shredded)
1 carton part-skim ricotta cheese (15 oz)
1 can green chilies (4.5 oz and chopped, drained)
½ tsp chili powder
⅛ tsp salt
2 cups canned black beans (drained and no salt added)
1 jar salsa (no salt added)
Cilantro sprigs (optional)
Directions:
- Preheat oven to 350 degrees.
- Cook lasagna noodles in boiling water and set aside.
- Mix together the cheeses and the next 3 ingredients. Spread over one side of a lasagna noodle and pour some black beans over the mix and roll noodle up.
- Place rolls with the seams down in baking pan.
- Bake for 25 minutes.
- Spoon the salsa over the rolls and sprinkle with cilantro.
