Ingredients:
1 onion (chopped)
3 garlic cloves (minced)
2 tbsp bacon drippings and olive oil
1 can stewed tomatoes (28 oz)
1 can tomato paste (6 oz)
8 slices bacon (cooked and chopped)
¼ cup dry red wine
2 tbsp red wine vinegar
½ - 1 tsp crushed red pepper flakes
2 cups spinach (fresh and shredded)
1 container Ricotta cheese (15 oz)
¾ lb shredded Swiss cheese
1 egg
8 cooked lasagna noodles
Grated Parmesan cheese
Directions:
- Preheat oven to 350 degrees.
- Sauté onion and garlic together in the oils until tender.
- Add the next 7 ingredients.
- In a separate bowl, mix together the Ricotta, Swiss cheese and egg.
- Pour 1 cup of sauce on bottom of pan and layer noodles on top.
- Top noodles with½ of the cheese mix and ½ of the sauce. Repeat.
- Bake for 40 minutes. Top with Parmesan cheese.
