Ingredients:
2 to 4 lb chuck roast
1 pack onion soup mix
½ cup water
3 cloves garlic (mashed)
½ cup ketchup
¼ cup olive oil
1 large red onion (sliced in rings)
6-8 baby potatoes
Directions:
- Preheat oven to 325 degrees F.
- Combine onion soup mix, water, mashed garlic, ketchup and olive oil together and marinate the roast in mixture for 2 to 3 hours.
- Line 13 x9” roasting pan with foil and layer of onion slices. Add the roast and then place onion slices on top. Wrap foil around it loosely, with the sides rolled up to make a little pouch.
- Rub baby potatoes with olive oil and sprinkle with salt. Cook them along sides of roast.
- Bake for 30-50 minutes or until done.
