Cheddar Beef and Potato Casserole

Ingredients:

2 ½ to 3 cups roast beef (diced)

½ cup onion (chopped)

1 cup gravy (beef or brown)

2 tbsp dry white wine

¼ tsp thyme (dried and crumbled)

¼ tsp rosemary (dried and crumbled)

Garlic powder

½ to 1 tsp salt

¼ tsp black pepper

Beef broth or water

2 cups mashed potatoes (seasoned)

2 tbsp butter

1 egg

½ to 1 cup shredded Cheddar cheese

 

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Chop up beef and onion. Add gravy, wine, and seasonings. If mixture somewhat dry, add the broth or water.
  3. Spread beef mix in baking pan.
  4. Combine mashed potato with butter and egg. Spread all over meat mix in pan. Top with cheese.
  5. Bake for 30 minutes.
