Ingredients:
1 large eggplant (peeled)
1 tomato
1 red bell pepper
1 onion
3 tbsp olive oil
1 prebaked Italian pizza crust (14 oz)
2 cups shredded Mozzarella cheese
½ tsp dried basil
½ tsp dried oregano
½ tsp dried thyme
¼ tsp garlic powder
½ tsp salt
¼ tsp pepper
Directions:
- Preheat oven to 425 degrees.
- Chop up first 5 ingredients and sauté them in 1 tbsp oil for 10 minutes.
- Layer the pizza crust with cheese and eggplant mix and sprinkle with basil and next 5 ingredients.
- Drizzle top with remaining oil.
- Bake for 10 minutes.
