Ingredients:
½ cup onion (chopped)
2 tbsp butter
½ cup carrots (shredded)
½ cup potatoes (shredded)
2 garlic cloves
2 lb ground beef
2 eggs
1 ½ cups dry bread crumbs
3 tsp salt
¼ tsp pepper
4 tbsp lemon juice
2 tbsp sugar
½ tsp cinnamon
2 tomatoes (medium sized)
Directions:
- Preheat oven to 350 degrees.
- Sauté onion in butter and stir in carrots, potatoes, and garlic.
- Cook for 5 minutes until wilted looking but crisp.
- Mix together meat, eggs, tomato, bread crumbs, salt, cinnamon, pepper, 2 tbsp of lemon juice, and vegetables.
- Pour into lightly greased loaf pan.
- Bake for 45 minutes.
- Mix the rest of the lemon juice and sugar together until sugar dissolves.
- Brush it over the meatloaf and cook for another 15 minutes.
