Greek Meatloaf

Ingredients:

½ cup onion (chopped)

2 tbsp butter

½ cup carrots (shredded)

½ cup potatoes (shredded)

2 garlic cloves

2 lb ground beef

2 eggs

1 ½ cups dry bread crumbs

3 tsp salt

¼ tsp pepper

4 tbsp lemon juice

2 tbsp sugar

½ tsp cinnamon

2 tomatoes (medium sized)

 

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Sauté onion in butter and stir in carrots, potatoes, and garlic.
  3. Cook for 5 minutes until wilted looking but crisp.
  4. Mix together meat, eggs, tomato, bread crumbs, salt, cinnamon, pepper, 2 tbsp of lemon juice, and vegetables.
  5. Pour into lightly greased loaf pan.
  6. Bake for 45 minutes.
  7. Mix the rest of the lemon juice and sugar together until sugar dissolves.
  8. Brush it over the meatloaf and cook for another 15 minutes.
