Ingredients:
6 Tomatoes
3 packs frozen spinach (chopped, thawed and drained)
1 onion (diced)
2 cloves minced garlic
1 egg (beaten)
⅓ cup Romano or Parmesan cheese
¼ cup dry bread crumbs
½ cup shredded mozzarella
1 tbsp Italian seasonings (basil, oregano, thyme)
Red pepper flakes
Salt
Pepper
Topping:
Seasoned bread crumbs
Shredded Mozzarella
Butter (diced)
Directions:
- Preheat oven to 350 degrees.
- Cut tops off tomatoes off and scoop out seeds. Use salt and pepper to season insides of tomatoes.
- Mix together all ingredients and fill tomatoes tightly. Put in greased pan.
- Sprinkle seasoned bread crumbs, mozzarella and diced butter on top of stuffed tomatoes.
- Bake uncovered for 25 to 30 minutes and then broil for 2 more minutes to brown.
