Ingredients:

2 medium yellow onions

¾ cup all-purpose flour

2 teaspoons baking powder

3 large eggs

1 ½ cups fine breadcrumbs

1 tablespoon seasoning

Cooking spray

 

 

 

Directions:

  1. Cut of both ends of onions and peel. Cut into ½” thick slices and separate into rings.
  2. Put rings in bowl and cover with cold water.
  3. Mix together flour and baking powder. In separate bowl, beat eggs. In third bowl combine breadcrumbs and seasoning.
  4. For each ring, remove from water. Coat in flour, dip in egg and coat in breadcrumb mixture. Be sure to shake off any excess after each step.
  5. Place onto rimmed cookie sheet that’s been sprayed with cooking spray. Repeat for all rings.
  6. Spray rings with cooking spray.
  7. Bake at 450° for 10 minutes. Turn rings over and return to oven for another 8 to 10 minutes, until brown and crispy.
