Ingredients:
3 medium baking potatoes (about 1 ½ pounds)
2 tablespoons lemon juice
2 teaspoons olive oil
1 teaspoon dried oregano
¼ teaspoon pepper
¼ teaspoon salt
2 cloves minced garlic
Vegetable oil cooking spray
Directions:
- Preheat oven to 400°.
- Cut each potato into 8 wedges, lengthwise.
- Combine lemon juice, olive oil, oregano, pepper, salt, and garlic in a bowl.
- Add potatoes and toss to coat.
- Place potatoes, skin side down, on lightly sprayed cooking sheet.
- Bake for 45 minutes, until tender and lightly browned.
