Ingredients:
3-4 medium sized beets (peeled)
4-5 carrots (peeled)
6 cloves garlic (thinly sliced)
2 tbsp fresh lemon juice
¼ tsp lemon zest
½ tsp extra virgin olive oil
Salt
White pepper
Directions:
- Preheat oven to 375 degrees.
- Toss all vegetables together with lemon juice and zest and put on a baking pan.
- Cover with foil.
- Roast for 40 minutes and shake occasionally.
