Ingredients:

1 zucchini (cut lengthwise in ½ and then crosswise into ¼ inch slices)

1 pepper (seeded and sliced)

1 medium onion (cut into ½ inch wedges)

¼ lb mushrooms (cut quarter sized)

3 tbsp vegetable oil

½ tsp basil leaves (dried)

¼ tsp salt

¼ tsp pepper

 

 

Directions:

  1. Preheat oven to 450 degrees.
  2. Spread the pepper, onion, zucchini, and mushrooms onto ungreased jelly roll pan.
  3. Mix oil, basil, salt and pepper together and brush all over the vegetables.
  4. Bake uncovered for 12 to 15 minutes.
