Ingredients:

4 potatoes (medium sized)

1 small onion (chopped finely)

2 tbsp oil (olive or vegetable)

2 tbsp rosemary leaves (chopped and fresh) or 2 tsp dried rosemary leaves

1 tsp thyme leaves (chopped and fresh) or ¼ tsp dried thyme leaves

¼ tsp salt

⅛ tsp pepper

 

 

Directions:

  1. Preheat oven to 450 degrees.
  2. Grease jelly roll pan and cut the potatoes into 1” chunks.
  3. Mix together the remaining ingredients, add the potatoes and coat well. Spread them out on pan.
  4. Bake uncovered for 20 to 25 minutes and turn them occasionally while cooking.
