Ingredients:
4 potatoes (medium sized)
1 small onion (chopped finely)
2 tbsp oil (olive or vegetable)
2 tbsp rosemary leaves (chopped and fresh) or 2 tsp dried rosemary leaves
1 tsp thyme leaves (chopped and fresh) or ¼ tsp dried thyme leaves
¼ tsp salt
⅛ tsp pepper
Directions:
- Preheat oven to 450 degrees.
- Grease jelly roll pan and cut the potatoes into 1” chunks.
- Mix together the remaining ingredients, add the potatoes and coat well. Spread them out on pan.
- Bake uncovered for 20 to 25 minutes and turn them occasionally while cooking.
