1 head cauliflower
4 tablespoons olive oil
1 teaspoon salt, to taste
- Set oven to 425° and line a baking sheet with parchment paper.
- Trim the head of the cauliflower, discarding core and thick stems.
- Cut cauliflower into small pieces.
- In large bowl, whisk together olive oil and salt.
- Add the cauliflower pieces and toss until well coated.
- Spread the mixture onto the baking sheet and roast for 1 hour, turning 3 or 4 times, until pieces are golden.
