Ingredients:

1 head cauliflower

4 tablespoons olive oil

1 teaspoon salt, to taste

 

 

 

Directions:

  1. Set oven to 425° and line a baking sheet with parchment paper. 
  2. Trim the head of the cauliflower, discarding core and thick stems. 
  3. Cut cauliflower into small pieces. 
  4. In large bowl, whisk together olive oil and salt. 
  5. Add the cauliflower pieces and toss until well coated. 
  6. Spread the mixture onto the baking sheet and roast for 1 hour, turning 3 or 4 times, until pieces are golden.
