Parmesan Topped Acorn Squash

Ingredients:

4 large acorn squash

Salt and pepper to taste

¼ cup parmesan cheese

4 tablespoons butter

 

 

Directions:

  1. Preheat oven to 350°.
  2. Cut squash in half, remove seeds and place cut side down in baking pan with ½ inch water.
  3. Cook 1 hour, or until squash is tender. Remove water from baking pan.
  4. Cut squash in criss-cross pattern and top with salt and pepper. Sprinkle with cheese and dots of butter.
  5. Return to oven, face up and broil just until butter is melted and cheese begins to brown.
