Roasted Cauliflower

Ingredients:

1 large head cauliflower, cut into florets

Kosher salt and freshly ground pepper to taste

4 tablespoons unsalted butter

1/3 cup pine nuts

1 clove minced garlic

½ pitted dates, coarsely chopped

 

 

Directions:

  1. Spread cauliflower on baking sheet in single layer. Season with salt and pepper and roast in 425° oven for 25 minutes, turning once during cooking, until edges are golden brown.
  2. Melt butter in skillet or medium heat. Stir in pine nuts and cook 5 minutes, until just golden.  Add in garlic and dates and cook until soft, 2 to 3 minutes. Season mixture with salt.
  3. Place roasted cauliflower in serving dish and drizzle with butter mixture. Toss well.
