Ingredients:

Cooking spray

2 pounds russet potatoes, cut in ¼ inch slices

3 tablespoons olive oil

Coarse salt and freshly ground pepper

Pinch of cayenne pepper

 

 

Directions:

  1. Mix together potatoes, oil, salt and pepper, and cayenne pepper in bowl. Toss well.
  2. Spread onto baking sheets sprayed with cooking spray. Bake for 30 minutes, rotating pan halfway through. Potatoes should be crisp and golden brown.
  3. Remove from pan and spread onto parchment paper. Let dry 5 minutes.
