Ingredients:
Cooking spray
2 pounds russet potatoes, cut in ¼ inch slices
3 tablespoons olive oil
Coarse salt and freshly ground pepper
Pinch of cayenne pepper
Directions:
- Mix together potatoes, oil, salt and pepper, and cayenne pepper in bowl. Toss well.
- Spread onto baking sheets sprayed with cooking spray. Bake for 30 minutes, rotating pan halfway through. Potatoes should be crisp and golden brown.
- Remove from pan and spread onto parchment paper. Let dry 5 minutes.
