Ingredients:
1/3 cup plus 3 tablespoons all-purpose flour
3 tablespoons unsalted butter
1 tablespoon vegetable shortening
1 ½ tablespoons ice water
1/3 cup red bell pepper (sliced)
1 tablespoon olive oil
2 cups packed fresh spinach (washed and trimmed)
2 large eggs
1/3 cup heavy cream
1/3 cup crumbled feta cheese
Salt and pepper to taste
Directions:
- Set oven to 425°.
- In bowl, blend together flour, butter, shortening, and salt until mixture is crumbly.
- Add in water and combine until dough forms.
- Place dough onto bottom and partially up sides of pie pan.
- Bake in oven for about 7 minutes, until set.
- In large skillet over medium heat, sauté red pepper for about 1 minute. Add in spinach until tender and wilted. Remove vegetables from heat and season with salt and pepper.
- In separate bowl, whisk together eggs and cream.
- Place pie plate on baking sheet. Sprinkle pie shell with feta and add vegetable mixture over top. Pour egg mixture over top.
- Bake for 15 minutes. Reduce oven to 350 and bake another 10 minutes, until set.
