Ingredients:
2lbs Root Vegetables (or sweet potatoes)
5 tablespoon shallots (peeled and minced)
3 tablespoons vegetable oil
3 tablespoons maple syrup
2 tablespoons balsamic vinaigrette
¼ teaspoon each salt and pepper
Directions:
- Preheat oven to 400°.
- In medium bowl, toss vegetables with 2 tablespoons of oil and 2 tablespoons maple syrup until well coated.
- Spread onto lightly oiled baking sheet.
Roast for 20 to 25 minutes, tossing ½ way through.
- Cook till tender.
While vegetables are roasting, sauté shallots in small sauce pan with remaining olive oil until soft.
- Add vinaigrette and remaining maple syrup. Simmer on low heat for 5 minutes until sauce has slightly reduced and thickened.
- Remove from heat.
Remove vegetables from oven.
Return to bowl and drizzle with sauce to coat.
