Ingredients:

2lbs Root Vegetables (or sweet potatoes)
5 tablespoon shallots (peeled and minced)
3 tablespoons vegetable oil
3 tablespoons maple syrup
2 tablespoons balsamic vinaigrette
¼ teaspoon each salt and pepper
 
 
Directions:

  1. Preheat oven to 400°.
  2. In medium bowl, toss vegetables with 2 tablespoons of oil and 2 tablespoons maple syrup until well coated.
  3. Spread onto lightly oiled baking sheet. Roast for 20 to 25 minutes, tossing ½ way through.
  4. Cook till tender. While vegetables are roasting, sauté shallots in small sauce pan with remaining olive oil until soft.
  5. Add vinaigrette and remaining maple syrup. Simmer on low heat for 5 minutes until sauce has slightly reduced and thickened.
  6. Remove from heat. Remove vegetables from oven. Return to bowl and drizzle with sauce to coat.
