½ cup unsalted butter, room temperature
¾ cup sugar
1/8 teaspoon salt
2 teaspoons orange peel, finely grated
24 ounces sweetened coconut, flaked
6 ounces bittersweet chocolate, melted
Beat butter in bowl until smooth. Mix in sugar and salt. Add in orange peel and eggs, one at a time.
- Stir in coconut. Drop batter by tablespoonful onto cookie sheet.
- Bake at 325° for 25 to 30 minutes. Let cool completely on cookie sheets.
- Drizzle chocolate over cookies. Remove from sheets once chocolate is firm.
