Ingredients:
½ cup butter
½ cup sugar
½ cup brown sugar
½ cup peanut butter
1 egg
½ teaspoon vanilla extract
1 ¼ cups all-purpose flour
⅔ teaspoon baking soda
¼ teaspoon salt
15 mini peanut butter cups
Directions:
- Preheat oven to 250 degrees F.
- Cream together the butter, sugar, brown sugar, and peanut butter in a medium sized bowl.
- Stir in egg and vanilla.
- Sift together the flour, baking soda, and salt into wet mixture. Mix together.
- Drop a tablespoon amount onto greased muffin pan, about ¼ full.
- Bake for 8 to 10 minutes, or until brown. When removed from oven, put a peanut butter cup in center of each cookie and press down. Let cool.
