Ingredients:

½ cup butter

½ cup sugar

½ cup brown sugar

½ cup peanut butter

1 egg

½ teaspoon vanilla extract

1 ¼ cups all-purpose flour

⅔ teaspoon baking soda

¼ teaspoon salt

15 mini peanut butter cups



Directions:
  1. Preheat oven to 250 degrees F.
  2. Cream together the butter, sugar, brown sugar, and peanut butter in a medium sized bowl.
  3. Stir in egg and vanilla.
  4. Sift together the flour, baking soda, and salt into wet mixture. Mix together.
  5. Drop a tablespoon amount onto greased muffin pan, about ¼ full.
  6. Bake for 8 to 10 minutes, or until brown. When removed from oven, put a peanut butter cup in center of each cookie and press down. Let cool.
