Ingredients:
5 tablespoons unsalted butter, melted and cooled
¾ cup all-purpose flour
¾ cup yellow cornmeal
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
1 cup buttermilk
2 large eggs
Directions:
- Mix together flour, cornmeal, baking powder, baking soda, and salt.
- In separate bowl, combine buttermilk and eggs. Add in melted butter. Add in dry ingredients and mix until just combine.
- Pour into buttered 8inch baking pan and cook 18-23 minutes in a 425° oven, until top has just begun to brown.
