Ingredients:

3 eggs

1 cup oil

2 cups sugar

2 cups grated zucchini

3 tsp vanilla

3 cups flour

1 tsp baking soda

¼ tsp f baking powder

1 tsp salt

3 tsp cinnamon

1 cup nuts

1 cup raisins (optional)

 

 

Directions:

  1. Preheat oven to 325 degrees.
  2. Beat eggs until fluffy and add the oil, zucchini, sugar and vanilla. Mix all ingredients together very lightly.
  3. Mix in flour, baking soda, salt, cinnamon, raisins (optional), and nuts. Blend everything together.
  4. Pour into 2 loaf pans and bake for 1 hour. Immediately remove from pans to cool.
