Ingredients:

1 pack cream cheese (3 oz softened)

¼ cup sugar

1 egg (beaten)

½ cup orange juice

1 ¾ cups buttermilk biscuit mix

¼ cup pecans (chopped)

6 tsp orange marmalade

 

 

Directions:

  1. Preheat oven to 400 degrees.
  2. Mix together the sugar and cream cheese, and then add the egg and juice.
  3. Blend in biscuit mix until the texture looks damp.
  4. Add the pecans and coat with mix.
  5. Pour a quarter of batter into lightly greased muffin pan and add a teaspoon of marmalade to each top and pour the rest of batter on top of marmalade.
  6. Bake for 20 minutes and cool for 5 before taking out of pan.
