Ingredients:
1 pack cream cheese (3 oz softened)
¼ cup sugar
1 egg (beaten)
½ cup orange juice
1 ¾ cups buttermilk biscuit mix
¼ cup pecans (chopped)
6 tsp orange marmalade
Directions:
- Preheat oven to 400 degrees.
- Mix together the sugar and cream cheese, and then add the egg and juice.
- Blend in biscuit mix until the texture looks damp.
- Add the pecans and coat with mix.
- Pour a quarter of batter into lightly greased muffin pan and add a teaspoon of marmalade to each top and pour the rest of batter on top of marmalade.
- Bake for 20 minutes and cool for 5 before taking out of pan.
