Ingredients:

¼ cup butter (softened)

¼ cup sugar

¼ cup brown sugar

1 egg

1 cup all purpose flour

½ cup cornmeal

2 tsp baking powder

¼ tsp salt

¼ tsp ground nutmeg

½ cup 2% milk

1 cup blueberries (fresh or frozen)

 

 

Directions:

  1. Preheat oven to 400 degrees.
  2. Mix together the sugar and butter and beat in egg. Then combine the flour, cornmeal, baking powder, salt and nutmeg.
  3. Pour over the butter mix and alternately pour in milk until wet. Add in blueberries.
  4. Pour the batter into lightly greased muffin pan.
  5. Bake for 18 to 20 minutes.
