Ingredients:
¼ cup butter (softened)
¼ cup sugar
¼ cup brown sugar
1 egg
1 cup all purpose flour
½ cup cornmeal
2 tsp baking powder
¼ tsp salt
¼ tsp ground nutmeg
½ cup 2% milk
1 cup blueberries (fresh or frozen)
Directions:
- Preheat oven to 400 degrees.
- Mix together the sugar and butter and beat in egg. Then combine the flour, cornmeal, baking powder, salt and nutmeg.
- Pour over the butter mix and alternately pour in milk until wet. Add in blueberries.
- Pour the batter into lightly greased muffin pan.
- Bake for 18 to 20 minutes.
