Ingredients:

1 cup raspberries

3 eggs

1 cup sugar

1 pack cream cheese (3 oz)

¾ cup milk

6 tbsp butter

1 ½ tsp vanilla

2 ½ tsp baking powder

2 cups flour

½ tsp salt

 

 

Directions:

  1. Preheat oven to 400 degrees.
  2. Beat together the cream cheese and ¼ cup of sugar, 1 egg and ½ tsp of vanilla until smooth.
  3. Over heat, mix the butter, milk, and the rest of the vanilla and stir until butter is melted.
  4. Cool mix and beat in the eggs, one at a time.
  5. Combine the baking powder, flour, salt, and ¾ cup of sugar. Add butter and milk mix to flour mixture and stir together. Gently add in raspberries.
  6. Pour batter into lined muffin pans and spoon 2 teaspoons of the cream cheese mix onto each muffin.
  7. Bake for 20 minutes.
