Ingredients:
1 cup raspberries
3 eggs
1 cup sugar
1 pack cream cheese (3 oz)
¾ cup milk
6 tbsp butter
1 ½ tsp vanilla
2 ½ tsp baking powder
2 cups flour
½ tsp salt
Directions:
- Preheat oven to 400 degrees.
- Beat together the cream cheese and ¼ cup of sugar, 1 egg and ½ tsp of vanilla until smooth.
- Over heat, mix the butter, milk, and the rest of the vanilla and stir until butter is melted.
- Cool mix and beat in the eggs, one at a time.
- Combine the baking powder, flour, salt, and ¾ cup of sugar. Add butter and milk mix to flour mixture and stir together. Gently add in raspberries.
- Pour batter into lined muffin pans and spoon 2 teaspoons of the cream cheese mix onto each muffin.
- Bake for 20 minutes.
