Ingredients:
1 cup graham cracker crumbs
3 tbsp sugar
3 tbsp butter (melted)
2 unsweetened packs chocolate (1 oz squares)
2 tbsp butter
16 oz cream cheese (softened)
1 ¼ cup sugar
¼ tsp salt
5 eggs
1 1/3 coconut flakes
1 cup sour cream
2 tbsp sugar
2 tbsp Brandy
Directions:
- Preheat oven to 650 degrees.
- Mix together the crumbs and butter and press onto the bottom of 9”springform pan and bake for 10 minutes.
- Melt chocolate and butter together until it’s smooth. In another bowl mix together the cream cheese, sugar, and salt. Add eggs one at a time, and mix after each addition. Mix both chocolate and cream cheese mixture. Blend in coconut to mixture. Pour over the crust.
- Bake for 50 minutes and reduce oven to 300 degrees.
- Mix together sour cream, sugar, and Brandy. Spread over the cheesecake and bake for 10 minutes. Cool completely before removing out of pan and garnish with coconut flakes.
