Ingredients:

1 ¼ cups graham cracker crumbs

¼ cup sugar

6 tbsp butter

¾ tsp cinnamon

32 oz cream cheese

¼ tsp salt

1 cup sugar

4 eggs

1 ¼ tbsp lemon juice

 

Topping:

2 cups sour cream

¼ cups sugar

1 tsp vanilla

 

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix together crumbs, sugar, butter and cinnamon and press into bottom of 9” springform pan.
  3. Together, mix salt, sugar, eggs, and lemon juice until smooth. Add cream cheese to a separate bowl and cream together. Then add the egg mixture to the cream cheese and blend together. Pour into the pan on top of the crust.
  4. Bake for 1 hour.
  5. Spread the topping on the cheese cake and increase the oven to 475 degrees and bake for 15 to 20 minutes. Refrigerate the cheesecake for 1 hour before serving.
