Yields 10 dozen small cookies.
Ingredients:
1 cup margarine
1 cup powdered sugar
1 cup granulated sugar
1 cup canola oil
2 eggs, beaten
2 teaspoons vanilla
5 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
¼ teaspoon salt
Sugar for dipping and topping cookies
Directions:
- Cream together margarine, powdered sugar, and granulated sugar.
- Add canola oil, eggs and vanilla. Beat well.
- Sift together flour, baking soda, cream of tartar and salt.
- Add dry mixture to wet ingredients. Mix well.
- Chill cookie dough several hours before baking.
- Roll dough into small balls, about the size of walnuts.
- Dip cookie bottoms in sugar and sprinkle sugar on top.
- Bake on ungreased cookie sheet for 10 to 12 minutes at 350°.
