So Good Sugar Cookies

Yields 10 dozen small cookies.
 
Ingredients:
1 cup margarine
1 cup powdered sugar
1 cup granulated sugar
1 cup canola oil
2 eggs, beaten
2 teaspoons vanilla
5 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
¼ teaspoon salt
Sugar for dipping and topping cookies
 
 
Directions:

  1. Cream together margarine, powdered sugar, and granulated sugar.
  2. Add canola oil, eggs and vanilla. Beat well.
  3. Sift together flour, baking soda, cream of tartar and salt.
  4. Add dry mixture to wet ingredients. Mix well.
  5. Chill cookie dough several hours before baking.
  6. Roll dough into small balls, about the size of walnuts.
  7. Dip cookie bottoms in sugar and sprinkle sugar on top.
  8. Bake on ungreased cookie sheet for 10 to 12 minutes at 350°.
