Ingredients:
½ cup butter, softened
½ cup sugar
1 egg
1 ½ cups flour
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
½ teaspoon baking powder
1/8 teaspoon salt
Additional sugar
Directions:
- Mix butter and sugar together until creamy.
- Add egg until batter is fluffy.
- Mix in flour, lemon juice, lemon zest, baking powder and salt.
- Cover and refrigerate for 2 hours.
- Preheat oven to 350°.
- Roll out dough on floured surface to ¼” thick. Cut with cookie cutter.
- Transfer to ungreased cookie sheet.
- Sprinkle top with sugar and bake 8 to 10 minutes until edges are brown.
