Butter Lemon Cookies

Ingredients:

½ cup butter, softened
½ cup sugar
1 egg
1 ½ cups flour
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
½ teaspoon baking powder
1/8 teaspoon salt
Additional sugar
 
 
Directions:

  1. Mix butter and sugar together until creamy.
  2. Add egg until batter is fluffy.
  3. Mix in flour, lemon juice, lemon zest, baking powder and salt.
  4. Cover and refrigerate for 2 hours.
  5. Preheat oven to 350°.
  6. Roll out dough on floured surface to ¼” thick. Cut with cookie cutter.
  7. Transfer to ungreased cookie sheet.
  8. Sprinkle top with sugar and bake 8 to 10 minutes until edges are brown.
