Ingredients:
2 cups flour, sifted
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup shortening (part butter)
1 cup granulated sugar
1 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla
1 cup flaked coconut
2 cups rolled oats
Directions:
- Mix salt, baking powder, and baking soda with sifted flour.
- Cream shortening with sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition. Add vanilla.
- Add in dry ingredients. Mix well. Fold in coconut and oatmeal.
- Drop by teaspoonful onto lightly greased cookie sheet.
- Bake at 375° for 10 to 12 minutes.
