Ingredients:
¾ cup margarine
2 cups sugar
1 can (16 ounces) pumpkin
4 eggs
2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon nutmeg
Frosting:
1 package (3 ounces) cream cheese
1/3 cup margarine
1 teaspoon vanilla
3 cups confectioner’s sugar, sifted
Directions:
- Cream margarine and sugar until light and fluffy.
- Blend in pumpkin and eggs.
- Add all dry ingredients and mix well.
- Spread mixture into greased and floured 15 x 10” jelly roll pan.
- Bake at 350° for 30 to 35 minutes. Cool well.
- For frosting, combine softened cream cheese, margarine and vanilla. Mix well.
- Add sugar slowly and beat well.
- Once bars have cooled, top with frosting.
