Ingredients:
½ cup butter
1 cup brown sugar
1 can (8 ½ ounces) sliced pineapple, drained, save juice
3 eggs, separated
1 cup granulated sugar
5 tablespoons pineapple juice
1 cup flour
1 teaspoon baking powder
Directions:
- Melt butter in 9 x 1 ½ inch pan.
- Sprinkle brown sugar evenly on top.
- Place a pineapple in center and arrange rest of pineapple to cover bottom of pan.
- Beat egg yolks till stiff and thick.
- Add sugar and pineapple juice.
- Mix in flour and baking powder.
- Beat egg whites until stiff and fold into flour mixture.
- Pour batter evenly into pan.
- Bake at 350° for 35 minutes.
