Pineapple Upside Down Cake

Ingredients:

½ cup butter
1 cup brown sugar
1 can (8 ½ ounces) sliced pineapple, drained, save juice
3 eggs, separated
1 cup granulated sugar
5 tablespoons pineapple juice
1 cup flour
1 teaspoon baking powder
 
 
Directions:

  1. Melt butter in 9 x 1 ½ inch pan.
  2. Sprinkle brown sugar evenly on top.
  3. Place a pineapple in center and arrange rest of pineapple to cover bottom of pan.
  4. Beat egg yolks till stiff and thick.
  5. Add sugar and pineapple juice.
  6. Mix in flour and baking powder.
  7. Beat egg whites until stiff and fold into flour mixture.
  8. Pour batter evenly into pan.
  9. Bake at 350° for 35 minutes.
