Ingredients:

2 ¼ cups all-purpose flour

½ cup confectioners’ sugar

1 cup butter, softened

4 eggs

1 ½ cups white sugar

½ cup lemon juice

1 tablespoon lemon zest



Directions:
  1. Mix together 2 cups flour and confectioner’s sugar.  Cut in butter.
  2. Mix until dough resembles pie crust consistency.  Press into bottom of 9x13 baking pan.
  3. Bake for 15 to 20 minutes, until golden.
  4. With hand mixer, beat together eggs, sugar, remaining flour, lemon juice, and lemon zest for 1 minute.  Pour into baked crust.
  5. Bake for 20 minutes at 350°, or until lemon mixture has set. Let cool and dust with confectioner’s sugar.
