Ingredients:
2 ¼ cups all-purpose flour
½ cup confectioners’ sugar
1 cup butter, softened
4 eggs
1 ½ cups white sugar
½ cup lemon juice
1 tablespoon lemon zest
Directions:
- Mix together 2 cups flour and confectioner’s sugar. Cut in butter.
- Mix until dough resembles pie crust consistency. Press into bottom of 9x13 baking pan.
- Bake for 15 to 20 minutes, until golden.
- With hand mixer, beat together eggs, sugar, remaining flour, lemon juice, and lemon zest for 1 minute. Pour into baked crust.
- Bake for 20 minutes at 350°, or until lemon mixture has set. Let cool and dust with confectioner’s sugar.
