Ingredients:

1 c flour
1 t baking powder
½ c butter
1 egg beaten
1 T milk
8 T thick apricot preserves
1 c sugar
1 t vanilla
4 T butter, melted
2 C flaked coconut finely snipped
 
Directions:
  1. CUT butter into dry ingredients.
  2. MIX in egg + milk.
  3. SPREAD across bottom of 9 in spring-form pan
  4. SPREAD preserves over top
  5. BEAT egg white
  6. ADD sugar, vanilla, butter
  7. STIR in coconut
  8. SPREAD over preserves
  9. BAKE 350 deg for 25-30 min until top golden brown
  10. COOL Makes 12 wedges
  11. SERVE with a small scoop of softened ice cream.
