Ingredients:
1 c flour
1 t baking powder
½ c butter
1 egg beaten
1 T milk
8 T thick apricot preserves
1 c sugar
1 t vanilla
4 T butter, melted
2 C flaked coconut finely snipped
Directions:
- CUT butter into dry ingredients.
- MIX in egg + milk.
- SPREAD across bottom of 9 in spring-form pan
- SPREAD preserves over top
- BEAT egg white
- ADD sugar, vanilla, butter
- STIR in coconut
- SPREAD over preserves
- BAKE 350 deg for 25-30 min until top golden brown
- COOL Makes 12 wedges
- SERVE with a small scoop of softened ice cream.
