2 large eggs
2/3 cup sugar
1 teaspoon vanilla
½ teaspoon lemon zest
Pinch of salt
1 cup all purpose flour
10 tablespoons unsalted butter, melted and cooled slightly
Powdered sugar for dusting
- Beat together eggs and sugar in large bowl with hand mixer. Add in vanilla, lemon zest and salt. Add in flour and beat until blended.
- Slowly add in cooled butter, pouring in a steady stream until blended.
- Pour 1 tablespoon batter into each cookie in pan. Bake for about 16 minutes, until cookies are puffed and browned.
- Let cool 5 minutes and remove from pan. Repeat process with remaining batter, buttering and flouring pan every time.
- Top with powdered sugar.
