White Chocolate Apricot Brownies

Yields 9 brownies.

Ingredients:
2 bars white chocolate baking bars
⅓ cup flour
½ cup light brown sugar
2 beaten eggs
¼ tsp baking powder
¾ cup flour
½ tsp baking powder
¼ tsp salt
1 cup dried apricots (finely chopped)
¼ cup sliced almonds
¼ cup flaked coconut


Directions:
  1. Preheat oven to 350°
  2. Melt the chocolate and butter together. Add in the brown sugar, eggs, and vanilla.
  3. Combine the dry ingredients with the chocolate mix. Then mix together the apricots, almonds and coconut and stir ½ off the apricot mix into batter.
  4. Pour into greased 9” baking pan and sprinkle the rest of apricot mix on top.
  5. Bake for 25 minutes and cool completely.
