Ingredients:
⅔ cups butter
2 ¼ cups brown sugar (divided)
3 eggs
2 cups all purpose flour
1 tsp baking powder
1 tsp salt
1 tsp vanilla extract
2 medium-large red apples (peeled, cored and chopped)
3 oz block cream cheese
2 oz chopped pecans
1 tsp cinnamon
Directions:
- Preheat oven to 350 degrees. Put cream cheese in freezer for an hour.
- In large saucepan, melt butter and remove from burner.
- Add in 2 cups of brown sugar and mix well. Stir in the eggs, flour, baking powder, salt and vanilla extract and until well mixed. Fold in the apples.
- Pour into ungreased pan.
- Cut cream cheese into small pieces and mix with ¼ cup of brown sugar, pecans and cinnamon. Sprinkle on top of batter in pan.
- Bake for 35 minutes and serve warm or at room temperature.
