Ingredients:
1 cup white chocolate morsels
2 ½ cups flour
1 tsp baking powder
½ tsp salt
1 cup butter (softened)
1 ½ cups sugar
2 tsp vanilla extract
3 large eggs
3 tbsp grated lemon peel
1 ⅓ cups buttermilk
1 cup powdered sugar
3 tbsp fresh lemon juice
Directions:
- Preheat oven to 350 degrees.
- Melt the white chocolate morsels in the microwave until smooth.
- In a separate bowl, combine together flour, baking powder, and salt. Set aside.
- In another bowl, beat butter, sugar, and vanilla extract until creamed together. Beat in eggs, one at a time, and add the lemon peel and the white chocolate morsels.
- Beat in flour mix alternating with the buttermilk.
- Pour batter into Bundt-form pan.
- Bake for 50 to 55 minutes.
- Mix the powdered sugar and lemon juice together. Poke holes in the top of the cake and pour half of the glaze over it. Let it sit for 5 minutes and make more holes and pour the rest of the glaze over the cake. Cool completely.
