Ingredients:

1 cup white chocolate morsels

2 ½ cups flour

1 tsp baking powder

½ tsp salt

1 cup butter (softened)

1 ½ cups sugar

2 tsp vanilla extract

3 large eggs

3 tbsp grated lemon peel

1 ⅓ cups buttermilk

1 cup powdered sugar

3 tbsp fresh lemon juice

 

 


Directions:

  1. Preheat oven to 350 degrees.
  2. Melt the white chocolate morsels in the microwave until smooth.
  3. In a separate bowl, combine together flour, baking powder, and salt. Set aside.
  4. In another bowl, beat butter, sugar, and vanilla extract until creamed together. Beat in eggs, one at a time, and add the lemon peel and the white chocolate morsels.
  5. Beat in flour mix alternating with the buttermilk.
  6. Pour batter into Bundt-form pan.
  7. Bake for 50 to 55 minutes.
  8. Mix the powdered sugar and lemon juice together. Poke holes in the top of the cake and pour half of the glaze over it. Let it sit for 5 minutes and make more holes and pour the rest of the glaze over the cake. Cool completely.
