Ingredients:

1 cup cake flour, sifted

1 ½ cups sugar

¼ teaspoon salt

1 ¼ cups egg whites

1 ¼ teaspoon cream of tartar

1 teaspoon vanilla

 


 

 

 

Directions:

*Note: do not preheat oven.

  1. Sift together flour once, add salt, ½ cup sugar and sift 4 times.  Reserve.
  2. Beat egg whites until foamy, then add cream of tartar.  Beat until stiff peaks form.
  3. Mix in remaining sugar, 2 tablespoons at a time, until just blended.  Fold in vanilla.
  4. Sift ¼ cup of flour mixture at a time into wet mixture, folding lightly.
  5. Pour into ungreased angel food cake pan.  Gently cut through batter with knife to remove any bubbles.
  6. Place pan in cold oven and bake at 350° for about 1 hour.
  7. Remove and invert cake until completely cooled.
