Ingredients:
1 cup cake flour, sifted
1 ½ cups sugar
¼ teaspoon salt
1 ¼ cups egg whites
1 ¼ teaspoon cream of tartar
1 teaspoon vanilla
Directions:
*Note: do not preheat oven.
- Sift together flour once, add salt, ½ cup sugar and sift 4 times. Reserve.
- Beat egg whites until foamy, then add cream of tartar. Beat until stiff peaks form.
- Mix in remaining sugar, 2 tablespoons at a time, until just blended. Fold in vanilla.
- Sift ¼ cup of flour mixture at a time into wet mixture, folding lightly.
- Pour into ungreased angel food cake pan. Gently cut through batter with knife to remove any bubbles.
- Place pan in cold oven and bake at 350° for about 1 hour.
- Remove and invert cake until completely cooled.
