Ingredients:

2 cups sugar

¾ cup vegetable oil

3 eggs

1 tsp vanilla extract

¾ cup buttermilk

2 cups grated carrots

1 cup flaked coconut

1 can crushed drained pineapple (15 oz)

2 cups all purpose flour

2 tsp baking soda

2 tsp ground cinnamon

1 ½ tsp salt

1 cup chopped walnuts

 

Frosting:

8 oz cream cheese

1/2 cup butter, softened

4 cups powdered sugar

1 tsp vanilla extract

 


Directions:

  1. Preheat oven to 350° degrees.  Grease 13 x 9 baking pan.
  2. Combine together sugar, oil, eggs, vanilla and buttermilk. Stir in the carrots, coconut, and pineapple.
  3. In separate bowl, mix the dry ingredients and stir into carrot mix.
  4. Add in nuts and spread on greased pan.
  5. Bake for 55 minutes and cool completely.
  6. For frosting: mix together the butter, cream cheese, vanilla and powdered sugar. Frost cake when cooled.
