Ingredients:
2 cups sugar
¾ cup vegetable oil
3 eggs
1 tsp vanilla extract
¾ cup buttermilk
2 cups grated carrots
1 cup flaked coconut
1 can crushed drained pineapple (15 oz)
2 cups all purpose flour
2 tsp baking soda
2 tsp ground cinnamon
1 ½ tsp salt
1 cup chopped walnuts
Frosting:
8 oz cream cheese
1/2 cup butter, softened
4 cups powdered sugar
1 tsp vanilla extract
Directions:
- Preheat oven to 350° degrees. Grease 13 x 9 baking pan.
- Combine together sugar, oil, eggs, vanilla and buttermilk. Stir in the carrots, coconut, and pineapple.
- In separate bowl, mix the dry ingredients and stir into carrot mix.
- Add in nuts and spread on greased pan.
- Bake for 55 minutes and cool completely.
- For frosting: mix together the butter, cream cheese, vanilla and powdered sugar. Frost cake when cooled.
