Ingredients:
¾ cup white sugar
1/3 cup all purpose flour
¼ teaspoon salt
2 cups milk
3 egg yolks, beaten
2 tablespoons butter
1 ¼ teaspoons vanilla
1 9inch pie crust, baked
4 bananas, sliced
Directions:
- Preheat oven to 350°.
- Mix together sugar, flour, and salt together in a saucepan. Gradually stir in milk. Cook mixture over medium heat, stirring the entire time, until bubbly. Continue stirring and cook another 2 minutes. Remove from heat.
- Add a small amount of heated mixture to beaten egg yolks, and then add egg yolks to rest of heated mixture. Return pan to heat and cook another 2 minutes, stirring constantly. Remove from heat.
- Add in butter and vanilla. Stir until mixture becomes smooth.
- Place sliced bananas on top of baked pie shell. Pour pudding mixture over top. Bake pie for 12 to 15 minutes. Let chill for an hour prior to serving.
