Ingredients:

¾ cup white sugar

1/3 cup all purpose flour

¼ teaspoon salt

2 cups milk

3 egg yolks, beaten

2 tablespoons butter

1 ¼ teaspoons vanilla

1 9inch pie crust, baked

4 bananas, sliced

 

 

Directions:

  1. Preheat oven to 350°.
  2. Mix together sugar, flour, and salt together in a saucepan.  Gradually stir in milk.  Cook mixture over medium heat, stirring the entire time, until bubbly.  Continue stirring and cook another 2 minutes.  Remove from heat.
  3. Add a small amount of heated mixture to beaten egg yolks, and then add egg yolks to rest of heated mixture.  Return pan to heat and cook another 2 minutes, stirring constantly. Remove from heat.
  4. Add in butter and vanilla. Stir until mixture becomes smooth.
  5. Place sliced bananas on top of baked pie shell.  Pour pudding mixture over top. Bake pie for 12 to 15 minutes.  Let chill for an hour prior to serving.
