Ingredients:

6 tablespoons cornstarch

1 cup sugar

½ teaspoon salt

1 pie crust (baked)

2 20oz cans crushed pineapple (undrained)

4 eggs (separated)

2 tablespoons lemon juice

 

 

Directions:

  1. Mix together cornstarch, ½ cup sugar, salt, and pineapple (with juices) in saucepan.
  2. Stir constantly, over low heat, until mixture is thick and clear.
  3. In separate bowl, beat egg yolks.  Add in a little of hot mixture.
  4. Add eggs to pan, along with lemon juice. Cook for 1 minute.  Pour into pie crust.
  5. Beat egg whites until frothy.
  6. Add in remaining sugar and beat until stiff peaks form.
  7. Spread meringue mixture over filling.  Bake for 10 minutes at 400 degrees.
