Ingredients:
6 tablespoons cornstarch
1 cup sugar
½ teaspoon salt
1 pie crust (baked)
2 20oz cans crushed pineapple (undrained)
4 eggs (separated)
2 tablespoons lemon juice
Directions:
- Mix together cornstarch, ½ cup sugar, salt, and pineapple (with juices) in saucepan.
- Stir constantly, over low heat, until mixture is thick and clear.
- In separate bowl, beat egg yolks. Add in a little of hot mixture.
- Add eggs to pan, along with lemon juice. Cook for 1 minute. Pour into pie crust.
- Beat egg whites until frothy.
- Add in remaining sugar and beat until stiff peaks form.
- Spread meringue mixture over filling. Bake for 10 minutes at 400 degrees.
