Chicken Marinade:
  • 1/2 cup olive oil
  • 1/3 cup fresh lime juice (about 2 limes, squeezed)
  • 3 tablespoons minced fresh cilantro
  • 3 cloves minced garlic
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 pounds boneless/skinless chicken breasts

Taco Salad:
  • 4 Burrito-sized flour tortillas, prepared as instructed in Chicago Metallic non-stick tortilla shell pan
  • 4 cups prepared chicken
  • 1 cup canned black beans, drained and rinsed
  • 2 cup shredded lettuce
  • 1 avocado, peeled and cut into cubes
  • 2 large tomatoes, diced
  • 1/2 cup green salsa
  • 1/2 cup sour cream
  • 1 cup queso fresco, crumbled

Steps for Chicken Marinade:
  • Combine the first eight ingredients into a gallon-size plastic storage bag.
  • Close the bag and shake well to incorporate the ingredients.
  • Open the bag and add the chicken breasts directly to the marinade.
  • Close the bag and shake to coat the chicken breasts in the marinade.
  • Place in the refrigerator for at least 45 min.
  • Once the chicken is marinated, remove from the bag and cut in to small pieces, about 1-inch x 1-inch cubes.
  • Discard any remaining marinade.
  • Place the chicken in a large skillet and cook over moderate heat, until the chicken is cooked and the center of the chicken pieces are white.

  • To each of the prepared shells, add 1 cup chicken, followed by 1/4 cup black beans.
  • Sprinkle 1/2 cup of lettuce on top of chicken and black beans in each tortilla shell.
  • Add 1/4 cup avocado and 1/2 cup diced tomatoes on top of the lettuce in each tortilla shell.
  • Finish the taco salads by adding 2 tablespoons of green salsa, 1/4 cup crumbled queso fresco and a dollop of sour cream.
