  • 3 Large eggs
  • 1 1/4 Cup milk
  • 2 Tablespoons unsalted butter, cut into 12 even pieces
  • 1 Tablespoon unsalted butter, melted

INSTRUCTIONS
  1. Use Oil or use 100% oil nonstick spray to grease the popover pan. Preheat oven to 400°F, with the rack in the center position. Preheat the popover pan in the oven for about 2 minutes.
  2. Blend flour, salt, eggs, milk, and melted butter until the mixture is the consistency of heavy cream, about 1 - 2 minutes. Use a food processor, blender, electric or hand mixer to blend. The batter can be made ahead of time and stored in the refrigerator, but should be used at room temperature.
  3. Place one small piece of butter in each cup of the pan and place the pan back in the preheated oven until the butter begins to bubble, about 1 minute.
  4. Remove the pan from the oven and fill each cup half full with batter and bake for 20 minutes. Reduce oven temperature to 300°F and bake an additional 20 minutes.
    Popovers are best when served fresh from the oven. Serve with butter, jams, or other sweet or savory spreads.
